Village Olive Oil Dip

You may call this a dip, or a sauce or a marinade. It is easy and fun to make and can accompany a variety of dishes or it can be used as an appetizer. It can even be a complete meal with some olives and hearty bread. There are many variations of it and you may experiment with proportions and ingredients for the occasion, the season or your mood.

Ingredients:
No measurements here. Just use more or less of each ingredient according to your preferences and the number of people served.

  • KOTINOS Extra Virgin Olive Oil
  • Fresh squeezed lemon juice or balsamic vinegar
  • Garlic
  • Fresh ground pepper
  • Thyme, oregano, basil fresh or dried.
  • Preparation:

    1. Place olive oil in a round ball. Crash or press garlic and add to the oil (Note that the flavor of crashed garlic is very intense and a few cloves can go a long way). Add lemon juice or vinegar, salt and other spices as desired.
      For diping you may mix the ingredients with a fork before using or you may choose to serve as is.
    2. You may also choose to serve the oil in a shallow plate on which you drip balasmic vinegar and sprinkle fresh ground pepper. The contrasting colors of the golden-green oil and the black vinegar makes for a very attractive presentation.

    Uses:
    Place in the middle of the table and dip in fresh bread.
    Pour over fresh broiled or grilled sea food
    Use it as a marinade prior to broiling or grilling on chicken and seafood.
    Brush it on vegetables as you grill them
    Use it as a salad dressing.
